AN entrepreneur from Salisbury has launched a new business in a converted van with the hope of finally being able to realise her dream of opening a restaurant.
Victoria Ponsford is in stage two of her business plan following a successful number of Italian supper clubs that she hosted in the city.
Now she has converted a 1970s Renault Estafette into a mobile catering van and plans to bring Italian food to the masses.
She said: “I have always wanted my own restaurant so in order to get there, rather than getting a £300,000 loan from the bank or an investor, I've decided to get there incrementally.
“After a two month research trip in Italy, learning the language, speaking to locals and eating my way around the country, I got to know the best of the country's dishes and what street food actually is in Italy. Since then, I've been holding my supper clubs in the city and have now converted my own van.
“I plan on selling around the city and will try to be at as many market events as possible.
“I sell focaccia-based pizza by the slice, arancini, polpette, zuppa, focaccia and various other yummy Italian-inspired dishes.”
She will be in Churchfields this week outside of the Island Bathrooms store before moving on further afield to Southampton and Winchester next week.
