THE Rivers Edge Restaurant at the Legacy Rose and Crown Hotel on Harnham Road has launched its new menu — created by long-standing head chef John ‘Toby’ Tobin and his team.

New dishes to the menu line-up include seared scallops with bacon and shallot puree to start, followed by pork belly with sweet potato mash, crackling and Jack Daniels sauce and lemon posset with fennel biscotti to finish.

Toby, who has been cooking at the four star hotel for more than 40 years said: “Classic dishes will always be a staple of our menu so our renowned Salisbury Ale battered fish and chips and homemade steak & Guinness pie are staying firmly put. Having collected feedback from customers, we’ve also introduced some more modern influences to the menu to satisfy diners’ appetites for more adventurous flavours and techniques.”

Last month the hotel was awarded the TripAdvisor Certificate of Excellence for the third year in a row in recognition of its commitment to hospitality excellence.

Derek McNeil, the hotel’s general manager, added, “I’m proud of what our chefs have achieved with this new menu and we’ve already seen some fantastic feedback from our customers. We’re always looking for ways to delight our customers and this is the perfect way to complement the £100,000 refurbishment of the restaurant and riverside terrace that took place last year.”
