‘Clafoutis is a rustic French dish with connotations of haze, swaying poplars and tall towers of summer cloud’
INGREDIENTS
300g soft fruits (de-stoned, de-stemmed, chopped if necessary)
2 large eggs
100ml double cream (or full fat creme fraiche)
4 tbsp milk
2 tbsp plain flour
3 tbsp icing sugar
1 tsp vanilla extract Butter (for greasing)
METHOD
1. Preheat oven to 220Cgas mark 7/200C fan
2. Butter your baking dish
3. Arrange the prepared fruit in the baking dish and warm through in the oven for 2-3 mins
4. Meanwhile combine the rest of the ingredients into a silky batter
5. Turn the oven down to 170C/gas mark 3/150Cfan
6. Remove your baking dish from the oven and slowly pour in the batter, careful not to disturb the layout of your fruits.
7. Bake for 40-45 minutes until golden on top and the batter feels firm to touch with a slight wobble.
