THE Pembroke Arms Hotel in Wilton reopened on Tuesday following a six-month renovation project.
The former coaching inn has been taken over by Hillbrooke Hotels and offers nine bedrooms, a restaurant, wedding venue and conference facilities.
The hotel is furnished with colonially-themed furniture from Rajasthan supplemented with items from local suppliers and antique dealers, such as children’s suits of armour in the Pembroke Room.
Head chef in the restaurant is Paul Morgan, who has won a string of national awards and will be offering a new menu based on locally-sourced ingredients.
