I WISH I had some spare money.

Of course I would like to travel the world in style, and buy diamonds for my cat - who wouldn't? But I'd also like to try out a pop-up business as they seem to be, um, popping up everywhere.

Reading about the new pop-up gallery in Butcher Row, it got me to thinking that it would be great to have more of this kind of thing in Salisbury. There are so many boarded up properties in town at the moment and it would be great to see more galleries featuring the work of local artists, as well as other experimental businesses.

The potential is great - in the past I've been to a popup speakeasy, a pop-up Caribbean restaurant and a pop-up Campari bar. It's a fantastic way of seeing whether a new business would be viable in a certain area.

If it doesn't work - it's pop-up, pop-down - not good, but a damn sight better than investing in a full-blown business.

To tie in with my new love of juicing, I would like to see a pop-up juice bar.

I've got a sweet tooth, but we all know too much sugar is bad, and that drinking too much fruit juice as also bad, even though the sugar is natural, so I tentatively started experimenting with vegetable juices and working out what I like.

Having maintained a bagel with butter and marmite and a large cranberry juice habit for years when I was based in an office, I was astounded that I could basically not only keep down, but enjoy, a spinach based drink for breakfast.

Kale-spinach-kiwipineapple- apple, and pearginger- cucumber are taste sensations. However, the kale-spinach-lime-celerycucumber was one of the worst things I have ever tasted - and I once accidentally drank some mould.

I should just invest in a juicer I guess, but they are so expensive. I feel I need a character reference and proof of earnings for the past three years to get one.

And clearly I would rather fritter away my money on buying single juices for £4 a go.
