A NEW taste has come to Salisbury’s bar scene with the launch of a new craft brewery.

Twenty/15 is hoping to crack the Salisbury market and has proved popular since its May release with an initial batch of beer selling out.

The beer is brewed by Ben Lister and Luke Cannell out of Collingbourne Ducis. The pair, who used to work for Brew UK at Old Sarum, hope to make it on their own after being in an advisory role for the last two years.

They will be starting small by brewing 500 litres every four weeks, allowing them the flexibility to slightly alter the recipes as they go along.

“I think it is a work in progress and it will always, for us, be a work in progress,” Ben said. “That is the cool thing about only doing 500 litres at a time. We can change it, make another 500 litres, change it. I don’t think we will ever get to perfection because it is like cooking, you can play around with it, that is the thing with craft beers.”

Both from Salisbury, Ben and Luke hope to get the city embracing their modern-style craft beer before trying to expand across the south.

Ben said that to help with the expansion in Salisbury they have bought a small mobile bar that they hope to use at events such as Foodie Fridays in the Market Place.

“Salisbury is our focus because we do not have any new, modern style of beers,” he said. “With the mobile bar we will really push not just our own beer, but other ones so we can hopefully boost craft beers in Salisbury.

“If we can push craft beer in Salisbury then that will help us as a local brewer.”

Twenty/15 also sell kegs online but Ben says that this “takes the fun out of brewing” because he loves to see the public’s reaction when they taste the beer.

“We spend a lot of time developing and when we do have a new recipe, it is good to see what people think of the beer here in Salisbury because here you can get an opinion which isn’t the craft beer scene’s opinion,” he added.
