A NEW coffee shop with an emphasis on sustainability will open its doors this month to fill an empty space inside a shopping centre.

S'bury Coffee, an extension of B'mouth Coffee, plans to open its flagship store in Cross Keys Shopping Centre on October 16.

Founder Josh Hollands hopes to provide an inviting, dog-friendly space for people to gather, connect and relax in the former Salisbury Reds unit opposite Cool Merchandise.

S'bury will use 'eco-friendly' coffee beans from Carbon Neutral Drinks, a roastery in Shaftesbury, to make its drinks which Josh said sets his business aside from the competition.

The 28-year-old explained how "nothing goes to waste" because any excess coffee grounds are used to make fuel to roast another batch of beans.

Homemade paninis and freshly baked pastries will also be served at the shop, which has both indoor and outdoor seating areas.

A B'mouth Coffee trailer opened inside one of the seaside town's dog-friendly parks one week before Covid lockdown and, since then, Josh has served at events including Salisbury Vegan Market but he feels ready to launch a shop premises.

He said: "Cross Keys wanted to have a coffee shop in the middle but I have always wanted a shop. 

"When we got the opportunity to open in the shopping centre we thought it would be a nice place."

Seven college and six form pupils living in and around Salisbury have been hired and Josh hopes to interact with and get to know his customers.

"We want to make it a bit more personal," he added.

S'bury will have a 'soft opening' on Monday, October 9, and the shop will be open from 10am until 4pm until its grand opening to do some final staff training and take on board customer feedback.

From Monday, October 16, the shop will operate its full-time hours of 8am to 5:30pm Monday to Friday and 10am until 4.30pm on Sundays.

During its official launch, on Saturday, October 21, half-filled loyalty cards and samples will be handed out in Market Place.

Josh told the Journal he was feeling "stressed but excited" as he was fitting the shop out on Wednesday afternoon, October 4.

He said: "It will be really good once all the work is done. I can't wait to have people coming through the doors and getting their feedback."
